Chicken Gnocchi Soup

Parmesan

parsley (chopped)

Instructions
Prepare vegetables
Dice onion, mince garlic, slice carrots and celery.
Sauté aromatics and vegetables
Heat oil in a large pot, sauté onion, garlic, carrots and celery until softened.
Add tomato paste and spices
Stir in tomato paste, garlic powder, Italian seasoning, oregano, salt and pepper; cook 1 minute.
Add stock and simmer
Pour in chicken stock and water. Bring to a boil then reduce heat and simmer 15 minutes.
Finish and serve
Stir in half & half, mozzarella and Parmesan until melted. Garnish with parsley and serve hot.
