Sauce
soy sauce
60 ml
oyster sauce

white wine vinegar

aji amarillo paste

Instructions
Prepare and season the steak
Slice the sirloin against the grain, season with salt, pepper, cumin and olive oil.
Prepare vegetables and sauce
Slice onion and tomatoes, mince garlic, and mix soy sauce, oyster sauce, vinegar and aji amarillo paste to make the sauce.
Sear the steak
Heat a pan and sear the seasoned steak slices on each side until golden brown. Work in batches if needed.
Cook vegetables
Remove steak, add onions and sauté until they start to soften. Add tomatoes and garlic; cook until garlic is fragrant.
Combine and finish
Return steak to the pan, pour in the sauce and mix. Add the French fries and toss everything together until combined.
Serve
Garnish with fresh cilantro and serve hot with white rice.
