Instructions
Prepare oven and pan
Preheat oven to 180°C. Line a 20x20cm baking dish with parchment paper.
Melt chocolate and butter
Melt butter and dark chocolate together in a heatproof bowl over simmering water or in microwave in 30-second bursts. Stir until smooth.
Mix wet ingredients
In a large bowl, whisk sugar, eggs, and vanilla extract until pale and fluffy. Add melted chocolate mixture and whisk to combine.
Add dry ingredients
Sift in flour, cocoa powder, and salt. Gently fold until just combined. Do not overmix.
Add Oreos
Roughly chop 10 Oreo cookies and fold into the batter. Pour half the batter into prepared pan.
Layer whole Oreos
Arrange 5 whole Oreo cookies in the center of the batter. Pour remaining batter over top. Break remaining Oreos and sprinkle on top.
Bake brownies
Bake for 25-30 minutes until edges are set but center still has slight wobble. A toothpick should come out with moist crumbs.
Cool and serve
Cool completely in pan before cutting into squares. Best served at room temperature.

Store in airtight container. Excellent frozen and thawed at room temp
