Fried Mashed Potato Balls

Instructions
Prepare the potato mixture
Mix cold mashed potatoes with shredded cheddar cheese, sliced green onions, salt, and pepper until well combined.
Form the balls
Scoop about 2 tablespoons of the potato mixture and roll into 2.5 cm balls using your hands.
Set up breading station
Prepare three shallow bowls: one with flour, one with beaten egg, and one with panko breadcrumbs.
Bread the potato balls
Roll each potato ball in flour, then dip in beaten egg, and finally coat with panko breadcrumbs.
Heat the oil
Heat vegetable oil in a deep pan or wok to 175°C.
Fry the potato balls
Fry the breaded potato balls in batches for 2-3 minutes until golden brown and crispy.
Drain and serve
Remove the fried potato balls with a slotted spoon and drain on paper towels. Serve hot.
