Instructions
Prepare Oven
Preheat your oven to 180°C. Line a baking tray with baking paper.
Mix Butter and Sugars
Put the 125 g softened butter, ½ cup caster sugar and ½ cup brown sugar into a large bowl. Beat together until the mixture is smooth, creamy and lighter in colour.
Add Egg and Extract
Crack 1 egg into the mixture. Add 1 tsp vanilla extract. Mix until everything is well combined.
Mix Dry Ingrediants
In a separate bowl, combine: * 1½ cups plain flour * ½ cup self-raising flour * ½ tsp baking soda * ¼ tsp salt Give them a quick stir.
Combine Everything
Gradually add the dry ingredients to the wet mixture. Mix until a cookie dough starts to form.
Add Milk
Add 2 tbsp milk and mix. If the dough is still too dry or crumbly, add the third tablespoon of milk. Don’t add too much milk—the dough should be soft but not runny.
Chop chocolate
Roughly chop chocolate to create a variety of chunked pieces
Shape Cookies
Grab a good amount of cookie dough and put on tray to make Roughly 11-12 cookies
Bake
Bake at 180 for 12-15 minutes until edges golden brown and set and middle still soft
Cool
Cool on baking tray for 7 minutes
