Instructions
Preheat oven
Preheat the oven to 180°C without fan. Line a 20×20 cm baking dish with parchment paper.
Prepare brownie batter
Melt the butter and dark chocolate together over low heat or in the microwave. Stir until smooth, then let cool slightly. Whisk in the white sugar, brown sugar, eggs, and vanilla. Add flour, cocoa powder, and salt. Mix until just combined.
Prepare cookie dough
In a separate bowl, cream the softened butter with brown sugar and white sugar. Add the egg and vanilla, then mix in the flour, baking soda, and salt. Fold in the chocolate chips.
Assemble brookies
Spread the brownie batter evenly into the prepared baking dish. Drop spoonfuls of cookie dough over the brownie layer and gently spread to cover most of the surface.
Bake
Bake at 180°C for 25–30 minutes until the edges are set and the center is slightly soft.
Cool and serve
Let the brookies cool completely in the pan before cutting into squares.
