Cut potatoes into 2cm cubes, mince garlic, and juice the lemon.

Par-cook Potatoes

Heat olive oil in a large skillet over medium heat. Add cubed potatoes with garlic and mixed herbs. Cook covered for 15 minutes, stirring occasionally.

Sear Salmon Fillets

Push potatoes to one side of the skillet. Add salmon fillets skin-side down and sear for 4-5 minutes until skin is crispy. Season with salt and pepper.
