Fontina with Lemon Zest Pizza

Instructions
Prepare the dough
Take pizza dough and place it on a lightly floured surface. Stretch or roll gently into your desired shape.
Drizzle with olive oil
Evenly drizzle olive oil over the entire surface of the dough.
Add lemon zest
Sprinkle 2 tsp lemon zest evenly across the oiled dough for bright citrus flavor.
Add the cheeses
Distribute shredded fontina and mozzarella evenly over the dough, then finish with grated parmesan.
Bake the pizza
Transfer to a preheated 482°C pizza oven. Bake for 90 seconds until the crust edges are lightly browned and cheese is bubbling.
Finish and serve
Remove from oven. Add remaining 1 tsp lemon zest, microgreens, and extra grated parmesan. Serve immediately with lemon wedges on the side.
Storage
Best eaten fresh. Reheat only if necessary to maintain crisp crust.
