Instructions
Prepare beets and garlic for roasting
Drizzle raw beets with olive oil and wrap in foil. Cut the top off the garlic bulb, drizzle with olive oil, and wrap in foil.
Roast beets and garlic
Roast the beets and garlic in the oven at 200°C for 40 minutes.
Cook pasta
While veggies roast, cook pasta according to package instructions.
Prepare vegan feta
Open vegan feta package, drain excess water, and slice into cubes.
Peel roasted beets
Once beets are cooked, peel off their skin.
Make the sauce
To food processor, add roasted beets, squeeze out garlic cloves, add chopped vegan feta, olive oil, lemon juice, and pasta water. Blend until smooth. Season with salt and pepper to taste.
Combine and serve
Pour sauce over cooked pasta. Top with more vegan feta, fresh basil leaves, and chopped walnuts.
Serve hot
Serve immediately while warm for best texture and flavor.
Storage
Best eaten fresh. Sauce may separate when reheated - stir well before serving.
