Instructions

Prepare Pico de Gallo and Guacamole

Combine all Pico de Gallo ingredients in one bowl and all guacamole ingredients in another. Refrigerate both until ready to serve.

Prepare and Season Potatoes

Wash, dry and dice the Yukon Gold potatoes into small cubes. Toss with olive oil and taco seasoning until evenly coated.

Bake the Potatoes

Spread seasoned potatoes in a single layer on a parchment-lined baking sheet. Bake at 220°C, stirring halfway through, until golden and crispy.
