fresh spinach (fresh)

all-purpose flour (room temperature)

300 g

olive oil (room temperature)

warm water (warm)

Blanch the spinach

Quickly blanch spinach in boiling water to soften and preserve bright green color.

Blend spinach into puree

Puree blanched spinach with a little water until smooth.

Mix dry ingredients

Combine flour and salt in a large bowl.

Add wet ingredients

Add spinach puree, olive oil and warm water to the flour mixture.

Knead the dough

Knead until smooth and elastic, about 5 minutes.

Dough should be soft but not sticky - adjust with flour or water if needed

Divide and rest dough

Divide dough into 8 equal balls and cover to rest for 15 minutes.

Roll out tortillas

Roll each ball into thin circles about 20cm in diameter.

Cook tortillas

Cook each tortilla in a hot dry pan for 30-45 seconds per side until bubbles form and brown spots appear.

Storage

Fridge: 3 days
Freezer: 30 days
Reheat: Microwave 20-30 seconds or warm in dry pan

Stack with parchment paper between each tortilla to prevent sticking. Reheat gently to maintain softness.
