Prepare apple filling
Chop apples and combine with cinnamon, brown sugar, and water in a pan.
Cook apple filling
Cook over medium-low heat until apples are softened, about 5–7 minutes. Set aside to cool.
Mix dough
Combine flour, greek yogurt, baking powder, and cinnamon in a bowl until a dough forms.
Knead dough
Transfer dough to a well-floured surface and knead with your hands.
Roll and fill dough
Roll dough out and spread the cooled apples evenly over the surface.
Cut and fold dough
Fold the dough then cut both horizontally and vertically to distribute apples.
Shape fritters
Gently fold dough to incorporate apples, then divide and shape into fritters, using flour as needed.
Air fry fritters
Place fritters in greased air fryer, spray lightly with oil, and air fry at 190°C for 8 minutes. Flip, spray again, and cook for another 5-8 minutes.
Prepare glaze
Mix powdered sugar, milk, and vanilla until smooth.
Glaze and serve
Let fritters cool completely, dip both sides in glaze, then place on wire rack to set.
