Brownie Basque Cheesecake

Brownie Layer
unsalted butter (melted)

unsweetened cocoa powder

all-purpose flour

Burnt Basque Cheesecake Layer
cream cheese (room temperature)
600 g
granulated sugar
150 g
large eggs
3 pcs
heavy cream
200 ml
cornstarch
20 g
vanilla extract
5 ml
Instructions
Prepare brownie batter
Melt the butter and mix with sugar, cocoa, flour, eggs and salt to create the brownie base.
Bake brownie layer
Pour brownie batter into prepared pan and bake until just set.
Prepare burnt basque cheesecake batter
Beat cream cheese with sugar, add eggs, cream, cornstarch and vanilla until smooth.
Assemble layers
Pour cheesecake batter over the baked brownie layer.
Bake burnt basque cheesecake
Bake at high temperature until the top is deeply golden and center is still jiggly.
Cool and rest
Allow to cool to room temperature then refrigerate for at least 4 hours.
