Burger Sauce
mayonnaise

Instructions
Slice the onion
Thinly slice the onion using a mandolin or sharp knife.
Form beef balls
Divide the ground beef into 4 equal portions and roll each into a 115 g ball.
Make the burger sauce
Combine mayonnaise, ketchup, mustard, Worcestershire sauce, pickle juice, smoked paprika, garlic powder and onion powder in a bowl and mix well.
Heat the pan
Heat a cast iron or stainless steel pan over medium-high heat for 2-3 minutes until very hot (water droplets should bead up).
Place beef balls and season
Place the beef balls on the hot pan and season generously with salt and pepper.
Add onions and smash
Place a small handful of sliced onions on each ball, then smash down firmly with a spatula to create thin patties.
Cook and flip
Cook the patties for 2 minutes, then scrape and flip them over.
Add cheese and toast buns
Place a slice of cheese on each patty. Add the top bun first, then the bottom bun on the pan to toast.
Melt cheese and assemble
Cook 1-2 minutes until cheese melts. Remove buns and patties from the pan and assemble burgers with pickles and sauce.
