Mango Sticky Rice
Ingredients
Rice
Glutinous rice
200 g
Coconut Sauce
Coconut milk
400 ml
Sugar
50 g
Salt
2 g
Topping
Ripe mango
2 piece
Instructions
Rinse the rice
Rinse the glutinous rice under cold water until the water runs clear. This removes excess starch.
Soak the rice
Place the rinsed rice in a bowl and cover with water. Soak for 30 minutes to allow the grains to absorb moisture.
Steam the rice
Drain the rice and place it in a steamer lined with cheesecloth or banana leaf. Steam over medium heat for 25 minutes until the rice is tender and translucent.
Prepare the coconut sauce
In a saucepan, combine coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar dissolves. Do not boil.
Combine rice and sauce
Transfer the steamed rice to a bowl. Pour 3/4 of the warm coconut sauce over the rice and gently fold to combine. Let it absorb for 10 minutes.
Prepare the mango
Peel the mangoes and slice them into thin strips or cubes.
Serve
Spoon the sticky rice onto plates. Top with mango slices and drizzle with the remaining coconut sauce.
Storage
Best served fresh. The rice may harden in the fridge; gently reheat to restore texture.
