Instructions
Prepare the beef filling
Heat olive oil in a pan and sauté onion and garlic until soft. Add ground beef and cook until browned.
Season the beef
Add chili powder, cumin, salt, and pepper. Stir and cook for 2 more minutes.
Assemble the taquitos
Place beef and shredded cheddar cheese on each tortilla. Roll tightly into cylinders.
Fry the taquitos
Heat oil in a pan and fry taquitos until golden and crispy on all sides. Drain on paper towels.
Make the avocado sauce
Blend avocado, sour cream, lime juice, garlic, and salt until smooth and creamy.
Serve
Serve hot taquitos with avocado sauce on the side.
