Medium potatoes (whole)

Chicken breasts (raw)

Red bell pepper (raw)

Instructions

Boil the potatoes

Cook the potatoes in salted water until tender. Drain and set aside.

Cook the chicken

Cut the chicken into small cubes and brown in a pan with oil, salt and pepper. Add soy sauce and cook 2 more minutes. Set aside.

Sauté vegetables

In the same pan, sauté the chopped onion and peppers until soft.

Combine filling

Add the reserved chicken, paprika and crushed tomatoes. Cook together for a few minutes.

Make the potato mash

Mash the potatoes and mix with garlic powder, paprika, parsley, salt, pepper, olive oil and egg yolk until smooth.

Form and bake nests

Form nests from the potato mash on a baking tray or air fryer basket. Fill with chicken and vegetable mixture and top with grated parmesan.
