Prepare vegetables

Dice onion and bell pepper. Mince garlic.

Sauté vegetables

Heat olive oil in a pan and cook onion, bell pepper and garlic until softened.

Add spices and tomatoes

Stir in cumin and paprika, then add chopped tomatoes and simmer until sauce thickens.

Add eggs and finish

Make wells in the sauce and crack eggs into them. Cover and cook until whites are set.
