Prepare vegetables
Slice carrot into thin strips and red pepper into strips.

Boil ramen noodles according to package instructions, drain and set aside.

Make peanut sauce
Mix peanut butter, curry paste, and a splash of water to make a smooth sauce.

Stir-fry ingredients
Heat olive oil in a pan, add sliced vegetables and plant-based gyros, stir-fry for 3-4 minutes.
