Sheet Pan Chicken Kefta
Ingredients

ground chicken (ground)

onion (finely chopped)

garlic (minced)

fresh parsley (chopped)

ground coriander

bell peppers (sliced)

zucchini (sliced)

cherry tomatoes

Instructions
Prepare vegetables
Slice bell peppers and zucchini into strips. Halve cherry tomatoes.
Mix kefta
Combine ground chicken with onion, garlic, parsley, cumin, paprika, coriander, salt, pepper and olive oil. Mix well until evenly combined.
Form kefta
Shape the mixture into oval patties or cylinders about 8 cm long.
Arrange and bake
Place kefta and vegetables on a parchment-lined baking sheet. Drizzle with remaining olive oil and season lightly.
