Shred the chicken
Remove chicken from water and shred. You need approximately 2 cups of shredded chicken.
Sauté vegetables

Combine chicken and vegetables
Stir the shredded chicken into the sautéed vegetables.

Butter or spray a 9x13-inch casserole dish and spread a thin layer of sauce on the bottom.
Fill the tortillas
Fill each tortilla with the chicken mixture, roll up, and place seam-side down in the prepared baking dish.
Top with sauce and cheese
Spread the remaining sauce over the enchiladas, then sprinkle with shredded Monterey Jack cheese.
Bake the enchiladas
Bake at 175°C for 30-40 minutes until bubbly and golden on top.
Rest and serve
Remove from oven and let rest for a few minutes before serving.
Storage
Cover with foil when reheating to prevent drying out. Add a splash of milk if sauce seems too thick.
