Gaius Flavius Stew (Puls Pedicatoris)
A hearty Roman-inspired stew made with wheat berries, green lentils, vegetables, herbs, and a touch of vinegar. Simple, rustic, and filling.

red wine vinegar (liquid)

Instructions
Prepare water and start cooking grains
Bring a large pot of water to a boil with salt and olive oil. Add lentils and wheat berries.
Add vegetables
After 10 minutes, add chopped onions, leeks, and garlic to the pot. Optionally, fry the vegetables in olive oil beforehand for extra flavor.
Season and finish cooking
Add herbs, spices, and vinegar. Adjust salt to taste. Continue cooking for a few more minutes until the grains and lentils are tender.
Serve
Remove the pot from heat and serve the stew hot.

This stew actually improves in flavor after a day in the fridge. Can be stored without refrigeration for short periods due to its low-moisture nature when fully cooked.
