Cook ramen noodles according to package instructions until al dente. Drain and set aside.

Prepare the sauce

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, minced garlic, minced ginger, and chili flakes.

Cook the vegetables and tofu

Heat a pan over medium heat. Add the cubed tofu and cook until golden on all sides. Add bell pepper, carrot, and green beans. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
