Easy Saucy Ramen Noodles (Vegan Recipe)

Instructions
Cook the noodles
Cook ramen noodles according to package instructions until al dente. Drain and set aside.
Prepare the sauce
In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, maple syrup, minced garlic, minced ginger, and chili flakes.
Cook the vegetables and tofu
Heat a pan over medium heat. Add the cubed tofu and cook until golden on all sides. Add bell pepper, carrot, and green beans. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
Combine everything
Add the cooked noodles to the pan with vegetables and tofu. Pour the sauce over everything and toss to coat evenly. Cook for another 2 minutes until heated through.
Serve
Divide the noodles between bowls. Garnish with sesame seeds and serve immediately.
