Instructions

Prepare Masala Base

Melt butter in a pan and sauté onions until translucent.

Do not brown the onions too much; keep them soft and translucent.

Add Tomatoes and Spices

Add tomatoes and green chilli, then spices and cook on medium heat.

Add Water and Egg

Add water, grated boiled eggs and coriander. Mix well and finish with butter.

Make Fried Egg

Melt butter in omelette pan, crack in whole egg, season and cook until done.

Prepare Egg Mixture

Whisk eggs with salt, pav bhaji masala, water and oil.

Cook Egg Sheet

Melt butter, pour egg mixture and swirl to coat pan evenly.

Assemble and Finish

Add prepared masala to centre, fold sides, flip and cook 1 minute. Finish with butter and spices.

Serve

Serve hot with buttered ladi pav, grated boiled egg and coriander leaves.

Reheat: Microwave 1-2 minutes or reheat in pan

Best eaten fresh. Reheating may make eggs rubbery.
