Mix dry ingredients

In a large bowl, combine the sooji, powdered sugar, cocoa powder, baking powder and baking soda.

Add liquids and form batter

Pour in the milk, oil (or ghee) and vanilla essence. Stir until smooth and lump-free.

Rest the batter

Cover the bowl and let the batter rest for 30 minutes so the sooji can absorb the liquid.

Prepare the pan

Line a round or square baking pan with parchment paper and lightly grease the sides.

Steam the cake

Pour the rested batter into the prepared pan, place it in a steamer and steam on medium heat for 40–45 minutes until a toothpick comes out clean.
