Flourless Peanut Butter Cookies
Chewy, rich peanut butter cookies made without any flour - naturally gluten-free and incredibly simple to make with just a few pantry staples.

Instructions
Preheat oven and prepare baking sheet
Preheat oven to 175°C and line a baking sheet with parchment paper.
Mix ingredients
In a large bowl, combine peanut butter, sugar, egg, baking soda, and vanilla extract. Mix until smooth and well combined.
Shape cookies
Scoop about 2 tablespoons of dough for each cookie and roll into balls. Place on the prepared baking sheet, spacing them 5 cm apart.
Flatten cookies
Use a fork to gently press down on each cookie ball, creating a crisscross pattern on top.
Bake cookies
Bake in the preheated oven for 10-12 minutes until the edges are golden brown.
Cool cookies
Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Storage
Store in airtight container. Cookies will stay chewy for up to 5 days at room temperature.
