Spicy Enoki Mushrooms

Instructions
Prepare ingredients
Trim the root ends from enoki mushrooms and separate into small clusters. Mince the garlic and slice the chili peppers.
Heat the oil
Heat sunflower oil in a pan over medium-high heat until shimmering.
Sauté aromatics
Add minced garlic and sliced chili to the hot oil. Stir-fry for 30 seconds until fragrant.
Cook enoki mushrooms
Add enoki mushrooms to the pan. Stir-fry for 3-4 minutes until they start to wilt and release moisture.
Season the dish
Add soy sauce and salt. Toss everything together and cook for another minute.
Serve
Transfer the spicy enoki mushrooms to a serving plate and enjoy immediately while hot.
