Instructions
Cook the sushi rice
Rinse and cook the rice until tender and slightly sticky.
Season and cool the rice
Mix the hot rice with vinegar, sugar, and salt, then let it cool until warm enough to shape.
Prepare the toppings
Slice the salmon and avocado into neat pieces for topping the rice donuts.
Mix the spicy mayo
Stir mayonnaise and sriracha together until smooth and creamy.
Shape and assemble the sushi donuts
Form the rice into donut shapes, then top with salmon, avocado, sesame seeds, furikake, and spicy mayo.
Storage
Best eaten immediately after assembling. Store rice and toppings separately if you need to keep leftovers for a few hours.
