Prepare potatoes

Slice each potato in half lengthwise using chopsticks as guides on either side to prevent cutting all the way through.

Cut thin slices straight down without cutting all the way through the potato.

Flip the potato and slice diagonally the other way to create the accordion spiral effect.

Place the prepared potatoes in cold water and soak for 2+ hours to remove excess starch for extra crispiness.
