Instructions
Prepare the potatoes
Wash, peel and cut the potatoes into uniform sticks about 1 cm thick.
Soak the potato sticks
Place the cut potatoes in cold water for 20-30 minutes to remove excess starch for crispier fries.
Dry the potatoes
Drain and thoroughly pat the potato sticks dry with a clean kitchen towel.
Heat the oil
Heat sunflower oil in a deep pot or fryer to 160°C for the first fry.
First fry
Fry the potato sticks in batches for 4-5 minutes until pale and slightly soft. Do not overcrowd.
Rest the fries
Remove fries from oil and let them rest for 5 minutes on a wire rack or paper towels.
Second fry for crispiness
Increase oil temperature to 190°C and fry the potatoes again for 2-3 minutes until golden and crispy.
Season and serve
Drain excess oil, season with salt while hot, and serve immediately.

Best eaten fresh. Reheat in oven or air fryer to restore crispiness. Do not store in plastic containers.
