Classic American Coffee Cake
Ingredients
Cake Batter
all-purpose flour
250 g
granulated sugar
150 g
unsalted butter (softened)
115 g
large eggs
2 pcs
whole milk
120 ml
baking powder
10 g
vanilla extract
5 ml
Streusel Topping
all-purpose flour
100 g
brown sugar
100 g
unsalted butter (cold)
85 g
ground cinnamon
5 g
Instructions
Prepare streusel topping
Mix flour, brown sugar and cinnamon. Cut in cold butter until mixture resembles coarse crumbs. Set aside.
Cream butter and sugar
In a large bowl, cream softened butter with granulated sugar until light and fluffy.
Add eggs and vanilla
Beat in eggs one at a time, then add vanilla extract.
Combine dry ingredients
In a separate bowl, whisk together flour and baking powder.
Alternate wet and dry ingredients
Add flour mixture to butter mixture alternating with milk, beginning and ending with flour. Mix until just combined.
Assemble cake
Pour half the batter into a greased 23cm square baking dish. Sprinkle half the streusel. Repeat with remaining batter and streusel.
Bake the coffee cake
Bake at 180°C for 40-45 minutes until a toothpick inserted in the center comes out clean.
Cool and serve
Cool in pan for 15 minutes before slicing. Serve warm or at room temperature.
