Instructions
Prepare egg yolk mixture
In a bowl, beat egg yolks with half the sugar (60 g) until pale and creamy.
Add mascarpone
Add the mascarpone cheese to the egg yolk mixture and mix until smooth and no lumps remain.
Whip egg whites
In a second bowl, beat egg whites with remaining sugar and a pinch of salt until stiff peaks form.
Fold mixtures
Fold the mascarpone mixture into the egg whites using gentle folding movements until homogeneous.
Assemble first layer
Spread a layer of mascarpone cream at the bottom of a high-sided baking dish.
Add coffee-dipped biscuits
Dip Savoiardi biscuits in coffee mixed with orange liqueur and water (quick dip only) and place on top of the cream.
Repeat layers
Repeat the layering process with mascarpone cream, coffee-dipped biscuits, and cocoa powder until two layers are completed.
Chill
Refrigerate for at least 2 hours before serving.
