Instructions
Prepare the chicken
Cut chicken breast into long strips about 2 cm thick.
Make the hot seasoning
Mix cayenne pepper, paprika, garlic powder, salt, and black pepper in a small bowl.
Set up breading station
Prepare three bowls: flour in one, beaten eggs mixed with buttermilk in second, seasoned flour in third.
Bread the chicken
Dip each chicken strip in flour, then egg mixture, then back in flour for double coating.
Heat the oil
Heat sunflower oil in a deep pan or wok to 175°C for frying.
Fry the chicken
Fry chicken tenders in batches for 6-8 minutes until golden brown and internal temperature reaches 75°C.
Coat with hot seasoning
Toss hot fried chicken in the prepared hot seasoning mix while still hot.
Assemble sandwiches and serve
Place hot chicken tenders on buns with pickle slices and serve immediately.
