Instructions
Mix the dough
Combine freshly milled flour (30%) and all-purpose flour with water and active sourdough starter. Mix until shaggy dough forms.
Autolyse
Let the dough rest for 30 minutes to hydrate the flour fully.
Add salt and bulk fermentation
Sprinkle salt over dough and work it in with stretch and folds. Perform 4-6 sets of stretch and folds every 30 minutes during first 2 hours. Let dough bulk ferment for 8-12 hours at room temperature.
Pre-shape and bench rest
Gently pre-shape dough into round and let rest covered for 30 minutes.
Final shape
Shape dough into tight boule or your desired 3D flower form.
Proof in basket
Place shaped dough seam-side up in floured proofing basket. Cover and proof at room temperature for 2-4 hours or refrigerate overnight for cold proof.
Preheat oven
Preheat oven to 250°C with Dutch oven inside for 45-60 minutes.
Score artistic design
Turn out dough onto parchment. Score intricate 3D spring flower pattern.
Bake
Place dough with parchment into preheated Dutch oven. Cover and bake at 250°C for 20 minutes. Remove lid and bake 25-30 minutes more at 220°C until deep golden brown.
Cool completely
Remove bread from oven and cool on wire rack for at least 2 hours before slicing.
