Instructions
Brown the butter
Brown the butter for the cookie dough and let it cool slightly.
Make cookie dough
Whisk browned butter with sugars until glossy, then add eggs and vanilla. Sift in dry ingredients and fold in chocolate chips. Chill for 1 hour.
Preheat oven
Preheat oven to 175°C and line an 8x8 baking pan with parchment.
Melt chocolate and butter
Melt butter with chocolate chips for brownie batter.
Make brownie batter
Whisk olive oil and cocoa powder into melted chocolate mixture. In a separate bowl, whisk sugars, eggs, and vanilla. Combine both mixtures, then fold in flour.
Assemble brookies
Pour half the brownie batter into the pan. Add chunks of cookie dough. Pour remaining brownie batter, top with more cookie dough and chocolate chunks.
Bake brookies
Bake for 30-40 minutes until edges are set and center is slightly soft. Toothpick should come out with moist crumbs.
Cool and slice
Cool completely before slicing for clean layers.
