Season the chicken

Season chicken breasts generously on all sides with the spice blend.

Cook the chicken

Heat avocado oil in a large pan over medium-high heat. Add chicken and cook 4 to 5 mins per side. Add butter and baste until cooked through.

Preheat the oven

Preheat oven to 175°C while preparing the chicken filling.

Shred the chicken

While chicken is still warm, shred using a stand mixer, hand mixer, or two forks.

Mix buffalo chicken filling

Add cream cheese, cheddar, mozzarella, green onions, and buffalo sauce to shredded chicken. Mix well until combined.

Melt butter with garlic and parsley in a small saucepan or microwave.

Spread ranch on bottom buns. Add monterey jack slices, then buffalo chicken. Optionally top with shredded cheese. Add top buns and brush with garlic butter.
