Healthy Granola Cookies
Ingredients
Cookie Base
rolled oats

oat flour

pumpkin seeds

walnuts

apricots

cranberries

maple syrup

vegan butter

banana

peanut butter

cinnamon

Chocolate Coating
dark chocolate
80 g
coconut oil
10 g
flaky salt
1 pinch
Instructions
Preheat oven
Preheat oven to 180°C and line a baking sheet with parchment paper.
Mix wet ingredients
Whisk the melted vegan butter, banana, peanut butter and maple syrup until smooth and combined.
Combine dry ingredients
Fold in rolled oats, oat flour, pumpkin seeds, walnuts, apricots, cranberries, cinnamon and salt.
Shape cookies
Divide the mixture into 9 equal portions and shape each into a cookie about 1 cm thick.
Bake cookies
Bake for 20 minutes until edges are dark golden. Centers should remain soft and chewy.
Prepare chocolate coating
Melt dark chocolate and coconut oil together until smooth.
Coat and finish
Dip half of each cooled cookie into the chocolate mixture and sprinkle with flaky salt.
