Chicken Gyros Folded Wrap
Ingredients
Chicken Marinade
chicken breast (diced)
250 g
oregano
1 tsp
smoked paprika
1 tsp
garlic granules
0.5 tsp
ground cumin
0.5 tsp
lemon juice
1 tbsp
0% Greek style yoghurt
1 tbsp
salt
1 tsp
black pepper

Garlic & Herb Yoghurt
0% Greek style yoghurt
70 g
garlic granules
0.5 tsp
lemon juice
1 tsp
dried mixed herbs
0.5 tsp
salt
0.25 tsp
black pepper
0.25 tsp
To Serve

smoked paprika
0.5 tsp
halloumi (sliced)

tortilla wraps

shredded lettuce (shredded)

Instructions
Marinate the chicken
Combine diced chicken with oregano, smoked paprika, garlic granules, cumin, lemon juice, Greek yoghurt, salt and black pepper in a bowl. Mix thoroughly and leave to marinate.
Prepare and cook the fries
Toss the skin-on fries with smoked paprika and cook according to packet instructions.
Cook the chicken in the air fryer
Thread the marinated chicken onto skewers and place in the air fryer. Cook at 190°C for 10-12 minutes until cooked through and lightly charred.
Slice the cooked chicken
Carefully remove the cooked chicken from the skewers and slice into thin strips.
Prepare the garlic & herb yoghurt
Mix together the Greek yoghurt, garlic granules, lemon juice, dried mixed herbs, salt and black pepper until well combined.
Fry the halloumi
Fry the sliced halloumi in a pan until golden on both sides.
Prepare the wraps
Make a slice halfway through the centre of each tortilla wrap to allow folding.
Assemble the wraps
Fill the bottom left quarter with sliced chicken, the top left quarter with shredded lettuce and garlic & herb yoghurt, then add the fries followed by the halloumi.
Fold and toast the wraps
Fold each quarter over the next. Place the folded wrap in a dry frying pan over medium heat and cook for a couple of minutes each side until golden and sealed.
