unsweetened almond milk (liquid)

plain greek yogurt (plain)

maple syrup (liquid)

vanilla extract (liquid)

cornstarch (dry)

cinnamon (ground)

Instructions

Mix oat base

In a container with a lid, combine oats, chia seeds, yogurt, milk, ½ Tbsp of maple syrup, ½ tsp of vanilla extract & cinnamon. Give it a mix.

Prepare and cook peaches

Dice your peaches. In a bowl, combine the peaches and filling ingredients including remaining ½ tsp vanilla, ½ Tbsp syrup, & cornstarch (if using). Mix to coat the peaches. Heat a saucepan on medium heat. Add the peach mixture & heat, stirring, for about 3-5 min or until the peaches fully soften.

Combine layers

Add half the cooked peaches to the oat mixture & stir. Top with the remaining peaches.

Chill overnight

Put in the fridge overnight (or at least 3-4 hours). When ready to serve, add your favorite toppings.

Reheat: Serve cold or at room temperature
