Instructions
Prepare the lavash and egg mixture
Cut the lavash into thin strips or small bite-size pieces. In a bowl, whisk the eggs with salt and black pepper until just combined.
Lightly fry the lavash
Heat the ghee in a pan over medium-low heat. Add the lavash and sauté for about 1 minute, stirring gently so it does not burn.
Add the cottage cheese and tomato
Spread the cottage cheese evenly over the lavash in the pan. Add sliced tomato on top.
Cook covered
Pour the egg mixture over the cottage cheese and tomato. Reduce the heat to low, cover with a lid, and cook until the top is mostly set, about 4 to 5 minutes.
Flip and finish
Carefully slide the casserole onto a lid or plate, invert it back into the pan, and cook the second side over low heat under the lid for another 4 to 5 minutes until golden.
Garnish and serve
Transfer to a plate and sprinkle with chopped dill before serving.
