Prepare vegetables

Peel and cut potatoes, carrots and onion into small pieces.

Sauté vegetables

Heat olive oil in a pan and sauté onion, carrot and potatoes for a few minutes.

Add water or broth, bring to a boil, then simmer until vegetables are soft.
