Prepare Marinade and Marinate Steak

Cut sirloin steak into 2-3 cm cubes. In a bowl, toss steak cubes with oyster sauce, soy sauce, brown sugar, minced garlic, cornstarch, and black pepper. Let marinate for 15-20 minutes.

Slice Vegetables

While steak marinates, slice green peppers and onions into thin strips.

Sear the Steak

Heat pan on medium-high heat with a little oil until very hot. Add marinated steak in a single layer. Sear 1-2 minutes per side without overcrowding.

Sauté Vegetables

Remove steak from pan. Add sliced peppers and onions to the same pan. Sauté 2-3 minutes until slightly softened but still crisp.

Combine and Shake

Return steak to pan with vegetables. Shake everything together vigorously for 30-60 seconds to combine flavors.
