Instructions
Make the Dough
Mix warm water, yeast, and sugar. Let bloom, then add oil, salt, and flour; mix into dough. Rest, do stretch-and-folds, then let rise.
Cook Chicken
Marinate chicken with spices, yogurt, ginger-garlic paste, salt, and oil. Rest, then cook until done.
Make Peri-Peri Sauce
Roast bell pepper, tomato, garlic, and chilies with oil, salt, and pepper until charred. Blend with coriander, lemon juice, smoked paprika, and olive oil.
Shape the Pizza
Dust surface with flour and semolina. Stretch dough by hand (thin center, thicker edges).
Assemble
Brush crust with sauce, spread a thin layer in the center, then add mozzarella, chicken, veggies, and more mozzarella.
Bake
Preheat oven to 250–280°C with tray or pizza steel/stone inside. Bake until golden and bubbly.
