Prepare the sauce

In a small bowl, mix mayonnaise, mustard, sriracha, pickle juice, paprika, garlic powder, onion powder, and cinnamon until smooth.

Caramelize onions

Slice onion thinly. Heat a pan over medium heat, add sliced onions and cook slowly, stirring occasionally until golden and caramelized.

Cook bacon

Chop bacon into small pieces. In the same pan, fry until crispy. Remove and set aside, leaving fat in pan.

Divide ground beef into two 100g patties, season with salt and pepper. In the bacon fat, cook patties 3-4 minutes per side for medium.

Add blue cheese to hot patties to melt. Toast buns if desired. Assemble burger: bun, sauce, patty with cheese, caramelized onions, bacon, pickles, sauce, top bun.
