No-Bake Vegan Brownie Bars
Ingredients
Brownie Batter
creamy peanut butter (creamy)
180 ml
maple syrup
95 ml
coconut oil (melted, cooled)
60 ml
vanilla extract
5 ml
cocoa powder
50 g
almond flour
70 g
mini vegan chocolate chips
60 g
sea salt
1 pinch
Chocolate Topping
chocolate chips
90 g
coconut oil
10 ml
flaky sea salt
1 pinch
Instructions
Prepare baking sheet
Line a quarter baking sheet with parchment paper.
Mix wet ingredients
In a medium bowl, mix together the peanut butter, maple syrup, melted & cooled coconut oil, and vanilla extract until smooth.
Add dry ingredients
Add the almond flour. Sift the cocoa powder into the bowl and add a pinch of salt. Mix to incorporate.
Fold in chocolate chips
Fold in the mini vegan chocolate chips.
Shape the batter
Transfer the brownie batter to the prepared baking sheet and pack it down into a rectangle-ish shape about 1/4-1/2 inch thick.
Melt chocolate topping
In a separate bowl, melt the chocolate chips and coconut oil together in the microwave in 15 second increments, stirring between intervals until completely glossy and smooth.
Top and freeze
Pour melted chocolate on top of the brownie batter and smooth until even. Add flaky salt on top and place in the freezer to set for about 30 minutes or until the chocolate has hardened.
Slice and serve
Slice into bars and enjoy.
