Pan-Fried Pork Ears
A classic Bulgarian meze of tender pork ears fried in butter with soy sauce and black pepper, served with lemon and cold beer or wine.

Instructions
Boil the ears
Place the pork ears in a pot with water and boil until tender.
Cool and cut
Remove the ears from the water, let them cool slightly, then cut into bite-sized pieces.
Heat the pan
Heat the butter in a ribbed frying pan.
Fry the ears
Add the cut pork ears to the hot pan, season with soy sauce and black pepper, and fry while stirring continuously.
Serve
Remove from heat and serve the pan-fried pork ears with a slice of lemon and cold beer or wine.
Storage
Best consumed fresh; reheat gently to avoid drying out
