Blue Cheese Burger

Instructions
Prepare the patties
Mix beef and beef fat together. Season with salt and black pepper. Form into 2 large patties.
Make cherry sauce
Place frozen cherries in a pan with sugar, balsamic vinegar and rosemary. Cook until sauce begins to thicken.
Cook patties
Heat pan over medium-high heat. Cook patties for 4 minutes per side for medium-rare or longer if desired.
Assemble burgers
Toast buns if desired. Spread cream cheese on bottom bun, add patty, blue cheese, cherry sauce, arugula and top bun.
