Spooky Fudgy Stuffed Oreo Brownies

Instructions
Preheat oven
Preheat the oven to 175°C and line an 8x8 inch (20x20 cm) baking pan with parchment paper.
Melt butter
In a saucepan over low heat, melt the butter. Remove from heat and let cool for 1-2 minutes until warm but not hot.
Mix wet ingredients
Whisk the warm butter with oil, granulated sugar, and brown sugar for a full minute until glossy. Add eggs, egg yolk, and vanilla extract, whisking for another minute until the mixture is pale and slightly thick.
Add dry ingredients
Sift in flour, cocoa powder, espresso powder, and salt. Gently fold until just combined, being careful not to overmix.
Fold in chocolate and Oreos
Fold in the chopped dark chocolate and most of the Oreos, reserving some for the topping.
Layer batter and Oreos
Pour half the batter into the prepared pan, smooth it out, then add a layer of 9 whole Oreos. Cover with remaining batter and sprinkle chopped Oreos on top.
Bake brownies
Bake for 40-45 minutes until edges are set and puffed, and the center looks soft but not liquid.
Cool brownies
Remove from oven and let cool for at least 30-45 minutes so the brownies can fully set before slicing.
