Instructions
Prepare ingredients
Measure out all ingredients. Cut butter into medium-sized cubes.
Cook the caramel base
In a medium heavy-bottomed saucepan, combine sugar and water. Heat on medium, swirl gently every 20 seconds once bubbling starts. Do not stir.
Incorporate cream
Once caramel reaches amber color, remove from heat. Carefully pour in room temperature cream—it will bubble violently. Whisk well.
Add butter
Add cubed butter and whisk until the sauce becomes glossy and smooth.
Season and finish
Stir in vanilla extract and sea salt with a rubber spatula until fully incorporated.
Cool completely
Pour caramel into a small bowl or cup and let cool completely before serving.
