Prepare cherry compote

Combine frozen cherries, sugar, balsamic vinegar, and rosemary in a small pot. Cook over medium heat, stirring occasionally, until cherries break down and mixture thickens to jam-like consistency, about 15 minutes.

Remove rosemary sprig after cooking. Compote should coat the back of a spoon.

Prepare beef patties

Mix ground beef and beef fat in a bowl. Season generously with salt and black pepper. Form into 2 large patties, about 200g each. Make a slight indent in the center to prevent puffing.

Cook patties

Heat pan over high heat. Cook patties 4-5 minutes per side for medium-rare, adding blue cheese on top during last minute to melt.

Toast buns and assemble

Toast burger buns. Spread cream cheese on bottom bun, add arugula, patty with melted blue cheese, generous cherry compote, then top bun.
